Raspberry Commons
Our latest expression of Willamette Valley raspberries, Raspberry Commons gets not one, but two, doses of these luscious berries. Beginning with a blend of mature, amber-colored sour base that we've used previously in our Parliament series, Raspberry Commons underwent a secondary fermentation on exquisite biodynamic raspberries sourced from right next door at King Estate before another year-long maturation in neutral French oak barrels.
Unlike Parliament, this version was not finished in stout barrels, but was instead given a second dose of local raspberries from Corvallis’ Stahlbush Island Farm at blending. This final touch not only balances the acidity but amplifies the fruit's natural sweetness, allowing the raspberry flavors to burst from the glass!

ABV: 6.9%
Microbes: Saccharomyces, Brettanomyces, Lactobacillus
Pairing Suggestions: Steamed mussels with white wine and shallots, baked brie, duck breast with cranberry sauce, cheesecake with raspberry drizzle
