It’s no secret that we have a great admiration for Belgian Lambic brewers and blenders, and we’re thrilled to humbly offer you our first Gueuze-inspired blend. Echoing the centuries-old brewing techniques of Belgium, this beer features barrels from three distinct vintages in our cellar, including a portion that was inoculated spontaneously in the blossoming orchard next door, making this beer truly impossible to replicate outside of our little valley and creating a snapshot of our terroir.
Each sip is a journey through layers of acidity, earthy yeast character, and oak tannins, with a lively effervescence that dances on the palate. Willambic is perhaps our most complex offering to date, with further nuance developing upon each successive sip.
