Building on our experience making barrel-aged beer with all manner of fruit co-ferments, we also make oak-aged ciders. Our 2025 semi-dry cider was a spontaneously fermented custom blend of heirloom apple varietals from Idyll Acres in the central Willamette Valley. Wickson, Roxbury, and Harrison are all acidic varieties that give the cider a real "zing." Wickson has a champagne quality, and the three together are bright and fresh. Reine des Pommes is a French bittersweet variety that offers some beautiful tannin to the blend. After a native fermentation, the cider was aged in 25% new oak to tie the blend together and create a lovely complexity and vibrancy on the palate. With lively carbonation, this resulting farmhouse cider is bright and complex with balanced acidity and tannin.
Our 2023 dry cider was also matured in oak and displays the complex, yet balanced and food friendly character that defines Alesong beers.
Similar to our beers, our hope with these ciders is to provide an elevated experience with a thoughtfully crafted beverage that showcases our region’s bounty and the magic of oak aging. -
