Holiday Pairing Dinner 2025 Menu (subject to change)
Welcome course — Festbier with trio of small bites, including duxelle toast with goat cheese, bacon jam phyllo tart with mascarpone, and cheese and charcuterie boards
First course — Cherry Parliament from the library with roasted pear and chicories with Rogue Creamery blue cheese and candied almond
Second course — Mezcla (2025 GABF Gold medal) with grilled tiger prawns topped with chorizo butter, Mexican corn truffle, and grilled pineapple relish
Third course — Bright Copper Kettles with Alesong pinot noir-braised shortribs atop stoneground grits with pickled cherry tomato and gremolata
Intermezzo — Blossom with lemon sorbetto and lavender sugar glass
Final course — Bière de Noël with Mexican Chocolate Flan with toasted Rhino Suit nibs
