Terroir Project: King Estate '22

We’re so excited to once again be participating in Firestone Walker’s multi-brewery collaboration Terroir Project, where each brewery makes a wine/beer hybrid beginning with the same base wort and co-ferments it with grapes grown within 100 miles of their brewery, using only the microflora naturally occurring on the grapes’ skin. We might win for the closest-proximity collaboration, as we used estate-grown, whole cluster Pinot Gris grapes from our neighbors at King Estate. We foot-stomped them in our cellar and fermented on the skins to yield an orange wine-inspired beer with an austere fruit profile and awesome peachy hue from the russet-colored grapes.

Pairing Suggestions: Citrus chèvre, shrimp piccata, lemon risotto, roasted cauliflower steaks with farro salad
